1/2 Lime (approx 2 tbsp), juice from
1/2 tsp Oregano, dried
3/8 tsp Powdered garlic
1/2 Red onion, small
2 Tomatoes on the vine, medium


1 Egg


1 For the pico de gallo
1 tbsp Lime juice, fresh
1/2 cup Mayonnaise

Baking & Spices

1/4 cup Al-purpose flour
1/8 tsp Black pepper, freshly ground
1/8 tsp Black pepper, fresh ground
1 1/4 tsp Cayenne
1/4 cup Cornmeal
1 1/8 tsp Kosher salt

Oils & Vinegars

1 Canola or vegetable oil

5/8 tsp Cumin
