Chicken & Spinach Soup with Fresh Pesto

Serves 5

Meat

1 Chicken breast (about 8 ounces), large boneless skinless

Produce

6 oz Baby spinach
1/3 cup Basil, lightly packed fresh leaves
1 15-ounce can Cannellini beans or great northern beans
1/2 cup Carrot or diced red bell pepper
1 large clove Garlic
1 1/2 tsp Marjoram, dried

Canned Goods

5 cups Chicken broth, reduced-sodium

Baking & Spices

1 Pepper, Freshly ground

Oils & Vinegars

5 tsp Olive oil, extra-virgin

Bread & Baked Goods

3/4 cup Plain or herbed multigrain croutons

Dairy

1/4 cup Parmesan cheese, grated

Chicken SOUP!! Made this tonight minus the spinach (I only like spinach raw) and croutons (who needs stale bread in their soup?). It was awesome! Two thumbs up plus very healthy!
