Gluten free • Serves 8


2 lbs Chicken thighs, boneless skinless
1 lb Sausage, smoked


1 lb Extralarge shrimp


3 stalks Celery
3 cloves Garlic
1 Green bell pepper, large
1 Onion, large
1 tsp Oregano, dried
1 Parsley
1 tsp Thyme, dried
1 (28 oz.) can Tomatoes, with juice

Canned Goods

2 cups Chicken broth

Pasta & Grains

1 3/4 cups Rice, long-grain

Baking & Spices

1 tbsp Cajun or creole spice mix
