Looks delicious and I like the addition of bleu cheese.
I make a reduced balsamic sauce (balsamic & brown sugar boiled until its nice & thick), slice the steak after I've grilled it, then crumble the bleu all over it and stick it under the broiler until its melted, then pour the balsamic over it. The most important thing it to cut the meat ACROSS the grain :)
It is delicious!
I prepared this dish last night and the flavor is delightful, but flank steak needs to marinated longer than 30 minutes. I marinated our for close to 2 hours, and it still wasn't enough. I would suggest overnight or longer.
