Many of my dishes I come up with by digging in the pantry, fridge, or freezer to find items that I’ve had for more than a few days that I haven’t yet used. Then I close my eyes and taste combinations of flavors and textures in my mind, toss the ingredients in the pan, and VOILÀ!

BARRAMUNDI w/ CRAWFISH JELLY REDUCTION --- for this dish I got really creative. I had a jar of Crawfish Jelly that I got during a recent trip to my home state of Louisiana that I have been dying to use. This jelly, by Ole Homestead, has a very interesting and unique taste. It is very light and sweet, with a flavorful hint of fresh crawfish and a seriously spicy kick…DELICIOUS! I used this jelly to concoct a sweet & spicy sauce made with shrimp, peppers, garlic, a walnut mix, and Grand Marnier.
