Breakfast cookies - 3 mashed bananas (ripe), 1/3 cup apple sauce, 2 cups uncooked quick-cooking oats, 1/4 cup skim milk, 1/2 cup raisins, 1 tsp vanilla, 1 tsp cinnamon and 1 tbsp sweetener. Preheat oven to 350 degrees. Mix all ingredients in a bowl really well. Let this mixture stand for at least 5 minutes to let the oats become good and hydrated. Heap the dough by teaspoonfuls onto a greased cookie sheet. Bake for 15-20 minutes.

Skinny Banana Cookies: 2 medium ripe bananas, mashed 1 cup of uncooked Old Fashioned Oats 1/4 cup chocolate chips Directions: Preheat oven to 350°F. Mix the mashed bananas and oats in a bowl. Fold in the chocolate chips. Using a spoon, scoop up the batter and place on the cookie sheet. Bake for 12-15 minutes.
Apple muffins: 2 cups applesauce 4 eggs ½ cup blanched almond flour or almond meal 1/3 cup coconut flour, sifted 1/3 cup finely chopped walnuts 1/3 cup finely chopped pecans ½ cup shredded coconut 2/3 cups sliced almonds 1 tsp cinnamon ½ tsp nutmeg ¼ tsp cloves ¼ tsp salt ½ tsp baking soda 1 fresh cooking apple, cut into small ¼” pieces (you could also substitute raisins)
Breakfast Overnight Oats Makes 1 large serving. ½ cup rolled oats (not quick cooking) ½ cup plain Greek yogurt 2/3 cup milk 1 tablespoon chia seeds Mix all the ingredients in a bowl or jar, cover with a lid or plastic wrap, and allow the mixture to sit in the refrigerator overnight. Incredible Baked Meatballs. 1lb hamburger, 2 eggs, beaten with 1/2 cup milk, 1/2 cup grated Parmesan , 1 cup panko or bread crumbs, 1 small onion, minced, 2 cloves garlic, minced, 1/2 teaspoon oregano, 1 teaspoon salt, freshly ground pepper to taste, 1/4 cup minced fresh basil Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.
