Nava Atlas’ Three-Potato Salad with Arugula

3 big handfuls Baby arugula leaves, rinsed, stemmed, and chopped or baby arugula, leaves
3 Blue or purple potatoes, medium
2 Celery stalks
2 tbsp Dill, fresh
1/3 cup Kalamata olives or sun-dried tomatoes, pitted
1/2 Red bell pepper, medium
1 Sweet potato, medium
2 Yellow potatoes, medium

Baking & Spices

1 Salt and freshly ground pepper

Oils & Vinegars

2 tbsp Apple cider vinegar
