This prime rib makes for a wonderful and special Christmas meal.
Herb-Crusted Prime Rib Recipe from Taste of Home -- They didn't have prime rib in stock, so I used a roast but followed the herb recipe. It turned out wonderful. I think the temps are off though, 160 was too well done, I think 145 for medium would have been better. That took about 1.5 hours. Great as leftovers on homemade bread with dijionaise.
