Garlic-Rubbed Tri-Tip with Mint Caper Salsa

Gluten free • Paleo • 45 mins to make • Serves 10-12


2 Tri-tip, boneless


2 Anchovy, fillets


11 Garlic clove
1 tbsp Lemon, zest and juice
3/4 cup Parsley and mint
1/2 tsp Red chile flakes
1/3 cup Shallots


2 tbsp Capers

Baking & Spices

1 tbsp Hungarian paprika, sweet
1 1/2 tbsp Kosher salt
2 tsp Pepper
1 Salt and pepper

Oils & Vinegars

3 tbsp Olive oil
3/4 cup Olive oil, extra-virgin

Garlic Rubbed Tri-tip. This is very delicious...I didn't marinate the steak as long...probably would have had more flavor. The Mint Caper Salsa would also be delicious on lamb steak. Yum! I like the anchovies...always good to add more Omega 3's where you cannot taste it :).

Garlic Rosemary Tri Tip Marinade

1- 14 oz can diced tomatoes 1- 10 oz can orginal Rotel 1/2 small onion, roughly chopped 1 clove garlic, peeled and smashed 1/2-1 jalapeno, seeded or not (depends on how spicy you like it) 1 teaspoon honey 1/2 teaspoon salt 1/4 teaspoon ground cumin small to medium size handful of cilantro, washed juice of 1 lime

Baked Garlic Brown Sugar Chicken - Hundo really liked it, but it didn't make much of the sauce/glaze. I did add some crushed red pepper for Hundo and he really liked that. I will make this again, but I think next time I will try adding some syrup to make more of a glaze and add more garlic.
