Quinoa and black bean casserole: No meat, but 15 g. protein!
I've been making this one for a while and it is delicious. I also like to use Kidney Beans instead of the black beans once in a while. Yummm
I'm new to this, but I don't see how we actually get to the recipe... any help?
Ahhh, never mind, I see if I click on the picture again, I get redirected to the recipe site. May my journey be enlightening to others... lol.
This is definitely a great one. I use pintos in it.
Do I need to cook it longer for the sweets to get soft? Mine came out a little crunchy. Still good though.
I don't think I ever cook it longer than what the recipe says to. But I don't put it in a 9 X 9 Pan I usually use a 13 X 9 and cover it for 15 mins and then uncover it for the last 15 mins.
Are your sweets soft or on the undercooked crunchy side? I may have used too many sweets, seemed like a lot. Not sure. I used a 9x13 pan also. Definitely tasty and I know healthy.
