Irish Beef Stew (Slow Cooker)

9 hrs and 35 mins to make • Serves 4-6

Meat

1 3/4 lbs Stew beef

Produce

2 peeled & cut into 1/2-inch pieces cups 2 lbs baby red potatoes
2 peeled & cut into 1/2-inch pieces cups 2 lbs russet potatoes
1 1/2 chopped cups 4 stalks celery
2 Bay leaves
4 Carrots, peeled, cut into 1/2-inch pieces, approx. 2 cups
3 Garlic cloves
1/2 tbsp Thyme, dried
1 Yellow or white onion, medium

Canned Goods

2 cups Beef broth, low sodium
2 tbsp Tomato paste

Condiments

1 tbsp Soy sauce

Baking & Spices

1 tbsp Cornstarch
1 Salt and pepper
1 tbsp White sugar

Oils & Vinegars

2 tbsp Olive oil, extra-virgin

Dairy

2 tbsp Butter, salted

Beer, Wine & Liquor

3/4 cup Guinness
3/4 cup Red wine
