Tilapia Baked in Couscous

Serves 4


4 8 ounces tilapia, fillets


3 tbsp Flat-leaf parsley
1 tbsp Lemon juice plus 1 lemon, fresh
1/4 cup Sun-dried tomatoes

Pasta & Grains

1 10 ounce box Couscous

Baking & Spices

1 Salt and pepper

Oils & Vinegars

3/8 cup Olive oil, extra-virgin

Nuts & Seeds

1/2 cup Almonds
1 tbsp Cumin, ground

Tilapia Baked in Couscous I put 1/2 to 1 cup of white wine in place of some of the water for a little more flavor. I've also used regular tomatoes instead of sun-dried tomatoes.
