Walking Taco Casserole ... Yum! Brown 1 1/2 lbs ground beef with about 1/3 of a large onion- chopped Add a small can of green chilies, 1 can of enchilada sauce, and 2 oz. cream cheese (optional) to the meat Layer in a casserole dish in the following order: Fritos chips, meat mixture, shredded cheese Repeat layers once again Bake at 350° for about 15-20 min or until cheese is bubbly Top individual dishes with lettuce, salsa, sour cream or your favorite taco topping ENJOY!

Easy Mexican Casserole: 1pound ground beef, 1 can Ranch or chili beans, 1 10 oz bag of tortilla chips, 1 can rotel tomatoes, 1 small onion chopped, 2 cups shredded cheddar cheese, 1pkg taco seasoning, 1 can cream of chicken soup, 1/2 cup water. Heat oven to 325, layer crushed chip and meat and cheese, 2 layers of each. Bake about 20 min or until bubbly.
OH MY!!! must try! 3/4 bag ziti noodles,1 lb of ground beef, 1 pkg taco seasoning, 1cup water, 1/2 pkg cream cheese, 1 1/2 cup shredded cheese -- boil pasta until just cooked, brown ground beef drain, mix taco seasoning 1 cup water w/ ground beef for 5 min, add cream cheese to beef mixture, stir until melted remove from heat, put pasta in casserole dish, mix in 1 cup cheese, top pasta/cheese with beef mixture gently mix, top w/ remaining cheese, bake at 350* uncovered for 15-20 minutes
Cheesy Taco Bake - 1# ground beef fried with 1 pkt taco seasoning, drain grease. Beat 2 - 8 oz cream cheese with 1 c Salsa. Toss together 2 c pepper jack and 2 c cheddar shredded cheeses. Heat together 1 can Rotel tomatoes w/chiles and 1 can refried beans. Layer a 9x13 sprayed dish with first one-half of meat, then flour tortillas to cover, then beans, then salsa, then cheese and repeat layers. Bake 350 for 30 min. Garnish with sour cream.
Cowboy Casserole adapted from a recipe at Taste of Home 1 1/2 pounds ground beef (I used 80/20) 1 medium onion, chopped 3 cloves garlic, chopped 1 can (15.25oz) whole kernel corn, drained 1 can condensed cream of mushroom soup 2 cups cheddar cheese, shredded 1/2 cup milk 4 tablespoons sour cream 1 bag (30 oz) frozen tater tots (I used Ore-Ida Crispy Crowns)
