Serves 4


1 lb 93% lean beef, lean


1 Celery stalk
1 clove Garlic
1 Onion, small
1/4 cup Parsley


1 Egg

Canned Goods

2 cups Beef stock, reduced sodium

Baking & Spices

1/2 tsp Allspice
1 Salt and pepper

Oils & Vinegars

1 tsp Olive oil

Bread & Baked Goods

1/4 cup Breadcrumbs


2 oz Light cream cheese

Swedish Meatballs. Use store bought meatballs. Butter, flour, beef stock, sour cream, parsley, salt & pepper. Make gravy by melting butter in a large skillet. Whisk in flour for a min until it's very slightly browned. Slowly whisk in broth, making sure there are no lumps, and continue cooking for a couple of mins until it begins to thicken. Stir in sour cream, parsley and seasoning. Add meatballs, reduce heat to low and cook 10 mins.
