Wild leeks! It's time now, early spring, to scout around in the woods for those wonderful, delicious and free wild foods -- wild leeks, or ramps. These wild onions are fabulously delicious. Don't be put off by their extreme pungency! They are really quite mild and flavorful. Harvest them for stews, salads, pot pies or any recipe where you'd use onions. They love moist woodlands! Don't harvest them all if you want some next year!
