Serves 4


8 Chicken thighs, bone-in skin-on


3/4 lb Cremini or mixed mushrooms
1 bunch Flat-leaf parsley, stems and leaves
2 cloves Garlic
1 small handful Porcini or mixed dried mushrooms, dried
2 Shallots, large
2 tbsp Thyme, fresh
1 14 1/2 ounce can Tomatoes

Canned Goods

2 cups Chicken stock
1 tbsp Tomato paste

Baking & Spices

1 Salt and pepper

Bread & Baked Goods

1 Bread, Crusty


2 tbsp Butter

Beer, Wine & Liquor

1/2 cup Marsala


1 tablespoon EVOO
