Homemade Chocolate Pudding with Baileys Irish Cream

Cherry hand pies! The box of puff pastry I have sitting in the freezer now has a mission. UPDATE: made these, and they are DEEE-LISH. I used bing cherries for the fresh ones, montmorency cherries for the dried ones, and halved the sugar. I would probably also use a little less corn starch the next time around.(sub splenda or stevia for sugar.. I would use splenda inside and stevia outside)

Sweet Potato Medallions - tried these baked. Bake at 425, 12 minutes each side. Delicious!
