Roasted vegetables: red potatoes, russet potatoes, zucchini, red bell pepper, baby carrots, sweet potatoes, and whole garlic cloves dusted with parmesan for the last 10 minutes in the oven. 350 for about 45 min. This looks good!!!
In a bowl mix olive oil, salt, pepper, fresh rosemary, potatoes, zucchini, baby carrots, sweet potatoes, whole garlic cloves, onions, and tomatoes. Bake at 350 for 45 minutes. Sprinkle veggies with parmesan for the last 10 minutes. So good and couldn’t be easier! Need to make sure to cut potatoes small enough so they can cook in allotted time.
Cut up into chunky bite-sized pieces some potatoes, zucchini, onions, baby carrots (leave whole), sweet potatoes, whole garlic cloves. Put in a 9×13 baking dish. Drizzle all over with olive oil, add salt and pepper to taste Bake at 350 for 45 minutes. Broil for 5 minutes for a nice brown crunch. Optional- Dust with grated parmesan for the last 10 minutes.
