Chicken taco chili...only about 200 calories a serving and makes 8 servings! 1 can black beans, 1 can kidney beans, 1 can corn kernels, 16 oz tomato sauce, 28 oz diced tomatoes, packet taco seasoning, 1 tbsp chili powder, 3 boneless chicken breasts. 6 hours high or 10 hours low in the crock pot. 1 cup is 5 pts+ on weight watchers.
Chicken Taco Soup (Cherri style) Cook 3 chicken breasts with some chipotle seasoning. Shred and set aside. In a big pot add 1 can of rotel (with juice), 1 can of sweet corn (rinsed and drained), 1 can light red kidney beans (rinsed and drained), 1 can of red beans (rinsed and drained). 2 cups of water 1/2 packet of ranch reasoning 1/2 packet of taco seasoning. I also add a couple shakes of chipotle powder. Cook on high until it starts to boil, stirring occasionally, and then reduce heat and simmer about 10 minutes.
