Coconut & Chicken Curry Soup

Meat

3 Chicken breasts, whole

Produce

1/2 cups Cilantro plus, Fresh
1 tbsp Ginger, Fresh
1 Green bell pepper, whole Small Thin
1 Jalapeno, whole
1/2 Onion, whole Large Fine

Canned Goods

1 1/2 cup Chicken broth
1 can Coconut milk, Unsweetened Full Fat

Condiments

2 tbsp Lime juice

Pasta & Grains

2 cups Rice, Freshly Cooked

Baking & Spices

2 tsp Curry powder
1 Salt and pepper

Oils & Vinegars

1 tbsp Olive oil

Nuts & Seeds

1/2 cups Chipped coconut, Unsweetened

    • Olive Oil • 1/2 of a medium yellow onion, sliced thin • 2 1/2 cups chicken broth • 14 ounces unsweetened coconut milk • 1 1/2 teaspoon curry powder • 3 chicken breasts, cut into bite sized chunks • 2 tablespoons fresh lime juice • 1 small red bell pepper, sliced thin • 1/2 cup chopped green onion • 1/2 cup chopped fresh cilantro, plus extra for garnish • 1/2 cup shredded coconut Heat the olive oil ad onion Add the chicken lightly salt and pepper. Sauté until cooked through and golden. Add chicken broth, coconut milk, curry powder. Bring to a simmer over medium heat. Add bell pepper, green onion, and cilantro and simmer an additional 3 minutes. Stir in lime juice. Garnish with additional cilantro and a sprinkling of shredded coconut. Serve.
