Red Lentils & Kale with Coconut, Ginger and Crispy Shallots. 1 c. red lentils, soaked in hot water for 15-20 minutes 1 Tbs. fresh grated ginger 2-3 spring onions, sliced thin 1 bunch kale, washed and torn into bite sized pieces 1 can unsweetened coconut milk 1 large shallot, sliced thin grapeseed oil for sauteeing and frying (coconut oil is also delicious for sauteeing kale)
