benriner japanese mandoline slicer | Don't be tempted by expensive slicers; this is what all the restaurant kitchens use. It takes up very little space and the blade is impossibly sharp (be careful!). I use it for everything; it's especially good at shaving sturdy winter vegetables (cabbage, fennel, cauliflower) thin enough to be salad-ready.
