1 tbsp Sriracha

8 oz Buckwheat soba

1 Kosher salt
1 tbsp Sesame seeds, black or white

Oils & Vinegars

1/3 cup Rice vinegar, unseasoned
1 tbsp Sesame oil, toasted
1/3 cup Vegetable oil


8 cups Matchstick-size pieces mixed summer vegetables (such as carrots, radishes, cucumbers, and bell peppers; about 1 1/4 pounds)
