Lutefisk is a traditional dish of the Nordic countries, made from air-dried/ dried/ salted whitefish. It is made using caustic lye soda. Because of the lye content, overcooking can cause the fish to turn into soap. There is no such thing as fresh lutefisk, real lutefisk would have been dead for at least 6 months, YUM!
