Irish Soda Bread

1/2 cup Currants, dried
1/2 cup Golden raisins, seedless

Refrigerated

1 Egg, large

Baking & Spices

3 cups Bread flour or all-purpose flour, white unbleached
1 tbsp Caraway seeds
1 tbsp Ener-g baking soda
1 tbsp Featherweight baking powder
5 tbsp Granulated sugar

Oils & Vinegars

1 Cooking spray, Nonstick

Dairy

1/4 cup Butter, unsalted
2 cups Buttermilk, lowfat

    Fruit soda bread (with raisins & sometimes dried fruit e.g. Apricot) is delicious and is quite common in Ireland, although the texture is rougher / drier than the bread pictured above.

    I LOVE all Irish breads....nothing better in the morning to have a cup of tea with real Irish soda bread!
