Multi level is a good idea. You can have a place to sit and eat but it doesn't take away from the counter space on the other side. And you can put outlets on it, which is helpful for food prep.

I love this option: a roll-around cabinet, it can be tucked under the counter just like a regular cabinet, but then pulled out as an optional island. You would have to keep non-delicate items in the cabinet if you are moving it around a lot. Maybe tupperware and basking utensils-plastic and light
