Autumn Cobb Salad with Smoky Pumpkin Dressing

Gluten free • Serves 4


2 cups Chicken breast, cooked
4 slices Crispy bacon


1 Avocado, large
1 cup Cherry tomatoes
2 tbsp Flat leaf parsley
2 Garlic cloves
1 head Iceberg lettuce
3 cups Pumpkin
1 Pumpkin
1/2 cup Pumpkin chunks, roasted
2 1/2 cups Pumpkin or squash, roasted
1 Shallot, large


4 Hardboiled eggs, cut into quarters


1 Pumpkin vinaigrette, Smoky

Baking & Spices

2 Kosher salt
2 tsp Paprika, smoked

Oils & Vinegars

6 tbsp Olive oil
1/4 cup Red wine vinegar


2 oz Feta cheese

    ended up not making this exact soup. Used 3 large cans of Pumpkin puree, the amount of Maple Syrup, Butter, Olive Oil, Onion, Garlic, and chicken stock called for (assuming a double to triple recipe). Added about a third of a can of chipotle peppers and salt. Not the recipe I pinned, but it was a hit with the husband!
