Italian Ricotta Stuffed Meatballs. Really great, the roommates raved about this one! Next time I may make with ground turkey. The recipe doesn't have measurements so I had to approximate on each ingredient. For 1.25 lbs ground beef... Ricotta mixture: 1/2 c. grated parmesan cheese, 1 T. parsley, 1 T. basil, 1/4 tsp salt, 1/4 tsp pepper. Meat: 1/2 c. bread crumbs, 1 egg, 1/4 c. chopped onion, 1 tsp minced garlic, 1 T. italian seasoning, salt and pepper to flavor.
