southwest tilapia - Mix 1 tsp garlic powder + 1 tsp chili powder + 1/4 tsp cayenne. Season fish with salt/pepper & spice mixture. Coat a baking sheet with oil & arrange tilapia in a single layer. Drizzle tilapia oil and bake until golden brown and flesh begins to flake, 10 minutes @ 450F.
