-Carefully open chilled can of coconut milk. Scoop out cream from top & add to chilled stainless mixing bowl. Discard water at bottom of can.
-Add all other ingredients.
-Whip on high with chilled whisk/whipping attachment to desired consistency, about 3-4 minutes.
Makes 4 cups, enough to serve your brunch crowd. Besides smoothies, spoon it on fresh fruit, crepes, & anything else you’d put whipped cream on. Be prepared to hand out the recipe! Your guests won’t believe something this yummy is so healthy :)
