Serves 6-8


1 1/2 lbs Beef short ribs, boneless


2 Ancho chiles, dried
1 Avocado, fresh
1 Bay leaf
1/2 lb Beans, dried small red
1/2 tsp Chipotle, powder
1 Cilantro, fresh leaves
1 Fresh or pickled jalapeno peppers
2 large cloves Garlic
2 Guajillo chiles, dried
1 Lime, juice of
1 tbsp Marjoram or mexican oregano, dried
1 Onion, small
1 Quick pickled red onion
1 Radishes
1 Red bell pepper, whole fire-roasted
1 28 oz. can Tomatoes, fire roasted with juice
2 cups Yellow onion

Canned Goods

1 tbsp Double-concentrated tomato paste


1 Your favorite hot pepper sauce

Baking & Spices

1/2 tsp Cinnamon, ground
1 tbsp Cocoa powder
1 tbsp Coriander seeds, whole
1 Kosher or sea salt
1 tsp Salt, coarse

Oils & Vinegars

1 Grapeseed or other neutral oil

Nuts & Seeds

1 tbsp Cumin seeds, whole

Bread & Baked Goods

1 Tortilla chips or warm tortillas


1/2 cup Tortilla chips


1 Cheddar or jack cheese, grated sharp
1 Sour cream

Beer, Wine & Liquor

1 cup Chocolate stout


4 1/2 cups Water

Easy Spanish Rice in the Rice Cooker with brown rice. Increased the water by 1cup and used my electric pressure cooker for 15 minutes! Perfect! I added another can of diced tomatoes after it was cook.
