Steak and Onion Taco Filling. Combine 1 lb sirloin steak, cut into thin 1" long strips with 1 tsp ground cumin, 1/2 tsp chipotle chili powder & 1/2 tsp kosher salt tossing to coat. Set aside. Heat 2 T olive oil in a large skillet over medium. Add 1 onion sliced & cook until tender, appx 6 to 8 minutes. Add the steak prepared earlier, increase heat to medium-high, cook, tossing occasionally, until steak is just cooked through, appx 3 to 4 minutes. Serve warm

Eight-Layer Casserole: first, let's get rid of that ground beef. Ground turkey, even turkey sausage, would be better. If you've never tried ground deer and have a friend who hunts and has some, give it a go--would be great in this recipe! For the wide noodles, use wheat penne or spirals. Biggest culprits are cheese and sour cream--go light/low-fat on these to make this dish much better!
