Chicken Enchilada Cake Serves 4 8 Tortillas (20cm/8inch) 1 Jar (450g/15oz) Enchilada Sauce 2 Cups Shredded Cooked Chicken 150g Mozzarella Cheese, Shredded Preheat the oven to 200C/400F. Line a 20cm (8inch) round cake tin with baking paper. Make layers in this order: Tortilla, Enchilada Sauce, Chicken, and Mozzarella. Continue the layer process until all the ingredients are used. Bake until the cheese is completely melted and the sauce bubbling, about 30 minutes.

CREAMY RICE Serves 6. ⅔ cup (125g) short grain rice ⅓ cup (85g) sugar 1 litre milk 2 tbsp. (30g) butter In a large saucepan bring all the ingredients to the boil. Reduce heat and simmer until the rice has absorbed all of the milk. This will take approximately 1–1½ hours so stir continuously to avoid the rice sticking to the bottom of the pan and burning. Flavour with various spices, nutmeg and cinnamon are both delicious!

Sift flour into a bowl and add remaining ingredients, beat with an electric mixer for two minutes until pale and fluffy. Line a patty cake tin with patty papers. Even scoop mixture across each and bake for 12 minutes until light golden brown. Optional: For more of a vanilla taste add a teaspoon of vanilla essence to the batter.

STEWED APRICOTS Serves 4 A recipe from the delightful Polly Davidson, Oxford UK. 250g plump, dried apricots 2 ½ cm (1-inch) piece of fresh ginger, grated 1 lemon Pop the apricots into a saucepan and cover with water. Add ginger and the peel of an entire lemon, finely sliced. Simmer contents for 20 minutes. Drain, reserving juice. Place apricots in a bowl and return juice to saucepan. Cook until it begins to caramelise. Pour the syrup over apricots and put in fridge.
Jelly Slice (makes 20) - 3 pkt raspberry (or any flavour) jelly - 3 cups (750ml) boiling water - 1tbs. Gelatin - 1 cup (250ml) cream Combine jelly crystals, water and gelatin and stir until dissolved. Add cream and stir through. Pour in to a slice tray and refirgerate overnight. Cut into slices before serving.
