Crushed New Potatoes

The perfect baked potato. How to make... -rinse and scrub potatoes -cut into thin slices (not all the way through), use a spoon or knife beside potato to keep you from cutting all the way through -put in baking dish and fan out slices -sprinkle with salt and drizzle with butter, sprinkle with herbs -bake at 425 for about 50 minutes -remove from oven and sprinkle with cheeses (whatever you want) -bake for another 10-15 minutes until cheese are melted and potatoes are soft inside

Zesty Italian Potatoes: Red potatoes cubed with skin left on, drizzle with extra virgin olive oil, coat with a package of zesty Italian dressing mix and stir to coat, add minced onion for flavor, salt and pepper to taste. Cook 400 degree oven for 45 minutes or until tender. Top with grated Parmesan cheese.

Parmesan garlic quinoa (you'll never eat mac & cheese again!)

Roasted green beans with mushrooms, balsamic, and Parmesan. Marinate in ziploc bag, spread out on cookie sheet and bake at 400, then sprinkle with Parmesan.

Another pinner: We are Ranch snobs at our house....no bottled Ranch-yuck here! This is the BEST HOMEMADE RANCH!! This tastes exactly like the Hidden Valley Ranch Packets that you add mayo and milk to....but WITHOUT the MSG and at A FRACTION OF THE PRICE! If my kids can't tell the difference when they dipped their carrots...no one will! Delish!

Cheesy Ranch Tater Tots - 1 bag frozen tater tots (or french fries) Sour Cream Ranch Sauce 1 cup sour cream 1/2 cup ranch dressing 1/4 cup milk Toppings 1 cup Shredded cheddar cheese 1/2 cup shredded mozzarella cheese 1/2 cup real bacon bits 1/4 cup green onions

All you do is peel whole potatoes, cut them all across, not too thin, and not all the way through, sprinkle with some salt, but not too much, the bacon is salty. Then fill with small bacon slices in between. Bake in a pan with some oil until potatoes are fully cooked, and serve!
