Corn & Israeli Couscous Salad, 1 c Israeli couscous, 2 cobs sweetcorn 1 small carrot, coarsely grated, 1/4 c sliced almonds, toasted, 1 tbl coriander leaves, 2 tbl neutral oil, 1 tbl lemon juice 1/2 tsp ground cumin, Cook couscous according to the instructions. Drain & cool. Boil sweetcorn in salted water for 3 min. Slice kernels off cobs & place in bowl with couscous, carrot, almonds In a sm jar shake together oil, lemon juice & cumin w/salt Pour over salad, toss.

Asian slaw with ginger peanut dressing Ingredients Dressing, 1/4 c honey, 1/4 c vege oil, 1/4 c unseasoned rice vinegar, 1 tbl soy sauce, 1 tsp sesame oil, 1 tsp peanut butter, 1/2 tsp salt, 1/2 tsp Sriracha sauce, 1 tsp minced fresh ginger, 1 lg garlic clove, minced, Slaw-4 c shredded coleslaw, 2 c shredded carrots, 1 red bell pepper, thinly sliced into bite-sized pieces, 1 c cooked & shelled edamame, 2 med scallions, finely sliced, 1/2 c chpd salted peanuts,1/2 c chopped cilantro,

    Instructions Make the dressing by combining all of the ingredients in a medium bowl. Stir until the peanut butter is dissolved. Set aside. Combine all of the slaw ingredients in a large bowl. Add the dressing and toss well. Let sit at least ten minutes so vegetables have a chance to soak up the dressing. Taste and adjust seasoning if necessary (I usually add a bit more salt.) Serve cold.

Smoked Salmon Avocado and Arugula Salad- Ingredients:- Rocket leaves (arugula), about 60g (2 oz) An avocado 1/2 of a full sized lebanese cucumber 100g (3 oz) smoked salmon (I used Tassal brand) 1 tbsps sesame seeds Dressing (measure to taste):- 1 lime about 1/2 cup of olive oil (adjust to your preference) Salt to taste A drop of sesame oil *optional* Let’s do it:

    (1) In a small dry pan, toast 1 tbsp of sesame seeds over medium flame until lightly brown. Set aside. (2) Wash and dry the rocket leaves. Set aside. (3) Slice cucumber. Set aside. (4) Halve a lime and squeeze the juice into a small bowl. Then add olive oil, sesame oil (if using), salt to taste and 1/2 tbsp of the toasted sesame seeds. Whisk until it emulsifies. (5) In a salad bowl, add rocket leaves, cucumber and hand torn smoked salmon. (6) Use an avocado slicer to slice the avocado. To avoid the avocado from turning brown, I dip slices of the avocado in the dressing and add into the salad bowl. Scatter the remaning toasted sesame seeds as a finishing touch. (7) Serve with the dressing separately.

Fiesta Grilled Shrimp and Corn Salad with Avocadoes

Farfalle Pasta Salad, Slice cherry tomatoes in half add 1crushed garlic clove, dose of olive oil, chopped basil, s, tomato juice will mingle w/ oil becomes dressing.For roasted chickpeas 1 can, drained & dried, tossed on a baking sheet w/ olive oil, p & pecorino romano. Roast 15 min. 400 until golden. cut asparagus diagonal, roasted a few min. Toss everything together adding olive oil, basil and grated pecorino romano. add julienned zucchini & sliced olives for added flavor .

    Dressing: 3 tablespoons fresh lime juice 1 tablespoon fish sauce 1 tablespoon water 1 1/2 teaspoons sugar $ 1/2 teaspoon chile paste with garlic (such as sambal oelek) Preparation To prepare slaw, combine first 11 ingredients in a large bowl. To prepare dressing, combine juice and remaining ingredients in a small bowl; stir with a whisk until sugar dissolves. Drizzle over slaw; toss well to coat. Serve immediately.

Oriental Chicken Salad- 2lbs chicken, 2tsp olive oil,1tsp sesame seed oil, 1tsp soy, s&p, Shrd, red & green cabbage, romaine lettuce, Julienne Carrots,1/2 chop red p. & 8 gr onion.1/4c chop cilantro, chow mein noodles, Dressing:1tbl sesame oil, 3tbls evoo, 3tbls rice vinegar, 1tsp fresh grtd ginger, 1tsp grtd garlic,2tsp sesame seeds, 2tps, s&p, Method: Grill chicken brushed w/s&p,oils & soy. Add salad ingr. to bowl. Mix dressing liquid pour over salad, let set 15mins. top w/chicken & chow mein

Pear Salad w/Walnuts & Feta Ingredients: 1 bag spring mix salad 2 pears, cored and thinly sliced, 1/4 cup walnuts, 1/2 cup crumbled feta cheese, 2 tbls balsamic vinegar, 3 tbls olive oil, freshly cracked pepper - Method, Preheat oven to 350 degrees. Spread walnuts on single layer in a baking sheet. Roast for 10 min., or until just fragrant. Add spring mix to a large bowl. Top with thinly sliced pears, feta cheese & walnuts. Drizzle with balsamic vinegar and olive oil. Add pepper to taste.

Ingredients: 3 sm. cucumbers,1 cup diced tomato or cherry tomatoes, 1/4 cup thinly diagonally sliced green onion, 1 avocado, 2 tsp. fresh lemon juice, about 1 T balsamic vinegar, sea salt & fresh black pepper to taste, Instructions: Cut cucumbers into half moon slices. Dice tomatoes to make one cup. Diagonally slice green onion, Peel and cut up avocado into small cubes. Combine everything and gently toss. Add a small amount of balsamic vinegar and gently toss. Season to taste.

SPICY CARROT SLAW WITH GRAPES-1/3 cup OJ concentrate, 2 tps fresh lime juice,1 sm jalapeno seeded and minced, ½ tsp salt, 3 lg julienned carrots, 2 cups green, red, and/or black seedless grapes, halved, 1½ cups jicama peeled and julienned, ½ cup chopped cilantro, ½ cup salted peanuts coarsely chopped, Whisk orange & lime juice, chile & salt. In a separate serving bowl, combine, carrots, grapes, jicama, cilantro and peanuts. Pour dressing over salad & toss. Refrigerated. Makes 8 servings.
