BACON, EGG AND TOAST CUPS: Lay 1 bacon slice (or crumbled sausage) on top of bread that you have flattened slightly with rolling pin and cut into rounds with cookie cutter and placed into muffin cups, then crack an egg over each. Season with salt and pepper. Bake at 375 degrees until egg whites are just set, 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately. Bacon & Cheese Quiche. just use a pre-made roll-out pie crust, then I whisk together about 5-7 eggs and 1-2 cups milk, and pour it into the pie crust. I add about 1-2 cups shredded cheese (my fav is a mexican blend), about 1/4 cup parmesan cheese, and 3-5 slices of crumbled bacon. Pop it into the oven at 350 degrees for 40-60 min, until a fork poked into the center comes out clean.

Fruit filled German pancakes made in muffin tins - these are really fun, but you have to make a lot *update* I made 2 1/2 batches and it fed 6 adults and 4 kids with probably a dozen leftover.
