Slice potatoes (2lg) into very thin slices (1/4 inch). Toss potatoes in (3Tbsp) olive oil, Italian seasoning (1tbsp) and salt (1tsp) in a ziplock bag to coat. Place in a single layer on a baking sheet lined with foil. Bake at 450 for 15 -20 minutes, until lightly brown. Top with Parmesan cheese and bake an additional 5 minutes.
No mayo! Avocado Chicken Salad: 2 or 3 boneless, skinless chicken breasts,1 avocado,1/4 chopped onion, juice of 1/2 a lime, 2 Tbsp cilantro,salt and pepper, to taste. Cook chicken breast until done, let cool, and then shred. Mix with all other ingredients.
One-Pot Pasta - Martha Stewart. Boil penne 6 minutes less than al dente; add broccoli florets, and cook until penne is al dente. Drain; return to the pot, and toss with a couple of crushed garlic cloves, some olive oil, the zest and juice of a lemon, salt and pepper, and plenty of Parmesan.
