4cups vegetable broth, 2 Tbsp olive oil, 12 oz. fettuccine, 8 oz. frozen chopped spinach, 1 (28 oz.) can diced tomatoes, 1 medium onion, 4 cloves garlic, ½ Tbsp dried basil, ½ Tbsp dried oregano, ¼ tsp red pepper flakes, freshly cracked pepper to taste, 2 oz. feta cheese.

Zucchini Fritters with Chili Lime Mayo. I made these last night (5-6-13). They were just as good as they look! OMGoodness! I made 1/2 recipe and it easily serves 3 people. Came out light and airy, not greasy, yet very moist. Only things I changed were to add a light sprinkle of garlic powder to the fritter batter and to double the lime in the dipping sauce. Would make a great meatless summer meal served with a fresh fruit salad. So good!!!

Avocado Pasta-200 g pasta 2 ripe avocados 2 cloves of garlic 1 lime basil 6-8 cherry tomatoes Handful of rocket Salt and pepper
Simply toss pasta with 1 1/2 teaspoons olive oil, breadcrumbs, parsley, lemon juice, garlic powder salt, and black pepper; Much healthier than any cream sauce >> yummy and sooo easy!
