I made the Spicy Chicken Rigatoni for dinner last night and it was amazing! Everyone loved it. It was a very inexpensive, quick and easy meal - we had leftovers, even after Stephen had two helpings. Would highly recommend! This link has several recipies that look good - I will definately try more!
Cheesy Rigatoni Bake- this is super good, easy and quick to make! Makes two servings- one as a freezer meal! For freezer meal- divide everything into two 8x8 casserole dishes. Bake one that evening and freeze the other..when ready to re-heat cover and bake on 375 ° for 30 mins and uncover bake additional 10 mins.
1 pound mini rigatoni pasta 1 shallot, sliced 3 garlic cloves, minced 1/2 teaspoon olive oil 5 tablespoons unsalted butter 1/4 cup flour 2 cups milk 1/3 cup Parmesan cheese 8 ounces Monterrey jack cheese 8 ounces mozzarella cheese 8 ounces cream cheese softened 1/4 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon nutmeg 1/3 cup panko bread crumbs
Baked Rigatoni Cake. Butter a 9-inch springform pan. Toss pasta with Parmesan cheese. Tightly pack pasta into pan, standing each piece on end.
Rigatoni lasagna--inexplicably, the kids were divided on liking this but my husband and I loved it. It makes a lot of dishes to clean up but also made enough to feed our family twice.
