Very easy banana bread recipe. don't have to be too precise on the measurements. i used my frozen overripe banana chunks and coconut oil instead of butter. and since i had no baking pans, i made banana pancakes. they came out perfectly and required no butter or syrup. next time i have powdered sugar, i'll make a little glaze and drizzle over for dessert.

    Unfortunately this was not what I was expecting. :( I omitted celery since Andy and I both dislike it, and cardamom because I didn't have it on hand. Overall the meatballs were very sweet (perhaps the celery and cardamom would have helped cut that) and the sauce was VERY runny. If I make this again, I'll need to add a ton of saltiness and maybe something with a little heat. Also might use less stock and maybe add cream of mushroom soup along with the cream cheese.

Crockpot Breakfast Casserole

    I might have done something wrong, but the texture of this was a little weird for a casserole. We DID find out, though, that this makes AWESOME breakfast burritos. It's perfect for them. Going to use what we have left and pre-make some breakfast burritos and freeze them for a quick breakfast option.

    Made this sauce last night. Had to get waaay creative with it since I was missing at least 3 ingredients, but it worked out amazingly with what I had. Very yummy homemade cream sauce. Andy's stamp of approval is on this one.

Beer Battered Tilapia

    Subbed ginger ale for the beer (we don't ever have beer) and it was DELICIOUS. This was a lot easier than I expected it to be. There's a ton of batter left, so I popped it in the fridge and I'm going to use it to batter some chicken tomorrow night :)

Garlic Roasted Potatoes

    seriously so easy. and dang DANG delicious. flipping the potatoes was the most difficult part, but that'd have been easier with a bigger pan. this is a winner recipe for sure.

    Very yummy! I used the oven for these-- totally winged it. Baked covered at 375 for 30 minutes... then turned the heat to 400 and moved the pan down a rack since the potatoes were still a bit firm. After 10 minutes, the bottom potatoes were soft, but the top ones were still firm so I moved them back to the top rack for another 10 minutes. They turned out delicious, but I'll do that better next time.

    Yum. I'm not sure about it being the "BEST" recipe on here, but it sure is tasty! And easy! (And the video on the website is pretty funny, too. That's a nice perk!)

Crunchy Coconut French Toast from Leite's Culinaria

    So delicious! Especially with butter and powdered sugar. mmm... I ended up having waaay too much egg mixture and coconut mixture even though I used 6 sliced of regular wheat bread (I should have accounted for them not being 1" thick, I guess). Next time I might cut those ingredients in half.

One Pinner said: Melt in your mouth crockpot cube steak ( I use one can cream of chicken, and one can golden mushroom.) I make this at least once a week!

    SO easy. SO delicious. Just like stroganoff. I used about 1 lb of ground beef instead of a ton of cube steak, and cooking on LOW it was ready to be eaten after about 3 hours. Switched the pot to warm setting until about a half hour before dinner and set it to low again. VERY yummy. Again, this leaves Andy-approved leftovers too.

Hot Vanilla Milk. This is a gem of a drink. And so easy! 1 cup milk, 1/2 tsp. vanilla, 1 tbsp. sugar. Warm milk in the microwave or on the stove. Add vanilla and sugar. (I added some brown sugar in as well) Optional: top with whipped cream, cinnamon, chocolate sauce, or marshmallows.

    This was everything I hoped it would be. So delicious, cozy, and just what I was looking for. I sprinkled a teeny bit of cinnamon and added marshmallows. Perfect.

Buffalo Chicken Mac and Cheese. omg.

    YES! This is amazingly, wonderfully easy AND delicious. A leftover that Andy is eating happily. :) The only change I'd make would be to double the cheese sauce. It turned out fine as it was, but I think it'd be yummier doubled.

Turquoise lemonade. Blue raspberry kool aid, sugar and country time lemonade mix. Signature drink.

    It's tough to get the right proportions for this when you only have a 1 qt. pitcher, but it is DEFINITELY worth trying. so delicious! and pretty!!

Philly Cheesesteak Rolls

    This recipe worked really well, but as it turns out these just aren't our thing. Lots of speculation was made as to how they could be better... seasoning the steak, using different cheeses, using other forms of bread... essentially changing the recipe. Leaving them as-is could be good for a party if they were cut into smaller pieces like the ones shown. Good recipe, just not for us.
