Baked Feta | 6 oz crumbled feta, 3/4 cup pizza sauce, 1/4 tsp red pepper flakes (or more if you want it spicier), 16 oz french bread loaf, sliced Combine feta, pizza sauce and red pepper flakes in a bowl. Transfer mixture to a small gratin dish or shallow baking dish. Bake 350 for 20 minutes or until bubbly. Serve with sliced french bread.

Roasted Edamame with Sea Salt and Cracked Black Pepper Makes roughly 2 cups 16 ounces frozen shelled edamame 2 teaspoons extra-virgin olive oil 1 teaspoon sea salt 1/2 teaspoon freshly-cracked black pepper (or 1-2 teaspoons alternate seasoning) If you have time, thaw the edamame for an hour or so in a strainer over a bowl (to catch the melting liquid) before baking. This will reduce the roasting time. Preheat the oven to 375°F.

APPLE CRUNCH PROTEIN BITES 1 c raw cashews 2 tbsps maple syrup 1 1/4 c Apple Cinnamon Protein Cereal 1/2 c dried apple pieces 1/4 c vanilla protein powder (+ 1 tablespoon for rolling) In food processor, combine cashews & maple syrup until crumbly. Add cereal & dried apple, continue processing. Add 1/4 cup protein powder, dough should form a ball. Put 1 tbsp protein powder on a small plate. Roll into balls and roll through protein powder to coat. Store covered in refrigerator.
