    Preheat oven to 325 degrees. In a large skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup and water. Simmer over medium-low heat until everything is well combined and heated through.

~~ Tortilla Chicken Casserole ~~ Makes 12 servings Ingredients 8 multigrain flour tortillas 3 cups chopped chicken 1 tablespoon olive oil 1 cup chopped onion 1 cup chopped red pepper 19oz black beans 14oz canned corn 1 tsp chili powder 3 cups salsa 1 1/2 cups sour cream 1 1/2 cup jalapeno monterey jack cheese, shredded 1 1/2 cup cheddar cheese, shredded 1 tablespoons finely chopped cilantro

    Directions Preheat oven to 350. Spray a casserole dish large enough to fit tortillas. Heat olive oil in sautéing pan; sauté onion and red pepper for 5 minutes, until softened. Mix in chili powder, remove from heat, stir in black beans and corn. In a medium bowl, mix salsa and sour cream. Layer tortilla, salsa mixture, chicken, tortilla, vegetables, cheeses. Repeat 4 times, or until you reach the top of the casserole. *NOTE: Stop layering once you reach the top of your casserole dish and top with cheese* Cover and bake for 25 minutes. Uncover and bake 10-15 minutes longer or until cheese is bubbly and browning. Let stand for 10 minutes before serving. Sprinkle with chopped cilantro and cut into 12 pie shaped wedges... preheat oven 350. mix 2c shredded chicken, 2c shredded cheese, can of cream of chicken, 1/2c milk, 1/2c sour cream, can of drained rotel, & 1/2 pack taco seasoning. Grease casserole dish. Crush 1/2 bag doritos and place in bottom, top with mixture, crush a few doritos on top. Bake for 30 minutes. Garnish with lettuce and tomatoe.

Homemade crunchwraps alot like taco bells but healthier Ingredients: 6 large flour tortillas 6 small corn tortillas (or tortilla chips) 1 pound ground beef 1 package taco seasoning sour cream nacho cheese (or shredded Mexican blend cheese) shredded lettuce diced tomatoes/ (see comment for directions.....)

    Directions:. Brown ground beef in a skillet, then add taco seasoning (according to package directions). Set aside. Bake the corn tortillas in the oven at 400 degrees for a couple of minutes, until they are golden and crunchy. Microwave the flour tortillas, one at a time (because they cool off quickly), for about 10 seconds to warm them up; this will make wrapping easier. You could also warm them up in the oven; just wrap them in aluminum foil and heat them up for about 10 minutes at 350 degrees. Lay out the flour tortilla. Spoon some of the seasoned beef into the center of the tortilla. Top with some nacho cheese, or shredded cheese. Place the crunchy corn tortilla on top of the cheese/beef; spread a dollop of sour cream on top of it, then toss on some diced tomatoes and shredded lettuce. Starting with the bottom of the tortilla, fold the edge up to the center. (cont)

    Continue doing this in a clockwise or counter-clockwise movement until all of the tortilla is folded over, and the filling is entirely enclosed. If your filling isn't entirely enclosed and you have an open spot, simply cut out a circle from another flour tortilla and place it on the exposed area, then wrap the tortilla again. Spray a frying pan with cooking spray. Carefully place the Crunchwrap, seam-side down, in the pan. Press with a spatula and cook on medium-low heat, for about 3 minutes, until the bottom is nice and brown. Flip it over and cook for another 3 minutes. Serve and enjoy

    We love this recipe at my house. Yes you bake the lettuce and tomatoes. The first time I made it I left some lettuce and tomatoes off. That way I could top my own. The next time I didn't leave any out. Huge difference. I like it better when I left some out. I liked the crispy crunch of the uncooked lettuce mixed in with the cooked lettuce.
