Avocado Egg Salad Recipe--best part, no mayonnaise!
Avocado Deviled Eggs. Yumm! : 6 peeled hard-boiled eggs, 1 pitted/peeled ripe avocado, 1 ½ tsp lime juice, 2-3 Tbsp regular or light mayonnaise, ½ tsp chopped fresh parsley, 1/8 tsp ground mustard (or yellow mustard to taste), salt & pepper to taste. Mash avocado & egg yolks then add rest of ingredients and fill egg white halves.

Preserving Avocado in the Freezer ~ Great idea for when avocados are on cheap. Ingredients: 5 ripe avocados; 5 TBS lemon juice. Directions: Slice the avocados in half and discard pits. Scoop the flesh from the peels. Mash the avocados, then add the lemon juice. Mix well. Spoon into zip top bags, squeezing out all the air before sealing. Freeze up to one year.

Avocado Salsa ~~~~This salsa is SO easy to whip up and tastes absolutely AMAZING! It is great with chips dipped in it or topped on your favorite Mexican dish.. or basically anything else you would want to put it on! It is my absolute favorite Mexican food topping
Twice baked breakfast potato: butter insides, add cheese, bacon pieces, top with the egg, salt & pepper. Pop into the oven @ 350 for about 15 - 20 minutes. Keep an eye on them, don't over cook the egg. Instead of topping with ingreidents below what about spinach, tomato, and mushrooms to make it healthier? (Top with cheese, bacon, green onions and some sour cream.)
Wrap these in foil and put on the grill or over the campfire and they would cook perfectly.
