Chicken salad - E meal I use Joseph's Pita Bread (low carb option) 2 (12.5 oz) cans of chicken, drained [or 3 cups diced cooked chicken] 3/4 cup light mayonnaise 1 cup red grapes, halved (You may want to go light on the grapes for THM but this is the only time I eat them) 2 stalks celery, finely diced 1 teaspoon dill weed
Chicken taco chili...only about 200 calories a serving and made 8 servings! 1 can black beans, 1 can kidney beans, 1 can corn kernels, 16 oz tomato sauce, 28 oz diced tomatoes, packet taco seasoning, 1 tbsp chili powder, 3 boneless chicken breasts. 6 hours high or 10 hours low in the crock pot.
QUICK SOAK - simmer beans 15 min before soaking to soften beans (& required at high altitude). GINGER - soak beans with ginger is proven to eliminate a major portion of the gas. SALT - do NOT add until serving. it toughtens the beans and prevents water absorption which increases cooking time.
