Crockpot Mexican Shredded Chicken. This doesn't go to a link, so here's how I (Nic) made it. 5 chicken breasts, 3 tbsp cumin, 3 tbsp chili powder, 2 tbsp chili pepper flakes, 2 tsp garlic powder, a dozen minced garlic cloves, 1 lime, 2 yellow onions, 3 red peppers, 1 green pepper,1 Serrano pepper and enough chicken broth to be right below all everything in the pot once it's all in. Cook in crockpot for 8 hrs on low. I put 2/3 the veggies under the chicken and the other 1/3 on top. Press it all down once in the pot to make sure the juice covers the chicken. Take chicken out 2-3 hrs before done & shred. Put back for the remaining cook time to soak up the flavor.
