Impossibly Easy Mini Blue Cheeseburger Pies
Baked Brie With Kahlua and Pecans: 3/4 cup chopped pecans 1/4 cup Kahlua 3 tablespoons brown sugar 1 (14 ounce) brie cheese Microwave pecans 1 1/2 minutes. Mix with Kahlua and brown sugar. Spread on brie. Microwave an additional 2 minutes; or bake at 350 until the topping is bubbly.Serve with crackers and/or apple and pear wedges.

Feta, Ricotta & Spinach Rolls- These were divine. I added a finely diced onion to the mixture, and also sprinkled on some sea salt flakes on top of the pastry before baking. Really delicious. Would be great for vegetarians.
