Quinoa and Black Bean Lettuce Wraps UPDATE: these are delicious! I love quinoa, and this recipe does not disappoint. My one criticism is that it says it is good for a "quick lunch." I made this for lunch and, from start to finish, it was close to 20 minutes of prep. Not exactly my idea of "quick" but it certainly was easy and tasty.

7 whole grahm crackers finley crushed, 1/4 cup powdered sugar, 6 TBSP butter melted, 4 bars milk chocolate candy divided, 12 large marshmallows...Preheat oven to 350, crush crackers and combine with powdered sugar and butter, place 1 tablespoon of mixture into mini muffin pan and press to form, bake 4-5 minutes, place one chocolate rectangle into each cup, cut marshmallows in half, place in oven 1-2 min, cool, melt rest of chocolate in a bowl and dip cooled cups to top!
