Our Subsitutions - We add an extra egg and replaced bread crumbs with crushed pork rinds to make it gluten free. We loved this recipe and plan to make it again soon!

Marinate thick sliced tomatoes with balsamic vinegar for 1 hour. Bake at 350 for about 7 min. Saute spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and sprinkle with low fat cheese of your choice. Broil till cheese is golden!
