Quinoa Pizza Bites: 1 cup quinoa cooked with 2 cups water + 2 large eggs 1 cup chopped onion+1 cup shredded mozzarella cheese+1/2 tsp salt+1/2 cup fresh basil, chopped (2 Tbn dried)+1/2 cup cherry tomatoes, diced+ 1 tsp paprika+1 tsp dried oregano Mix well; bake at 350 degrees for 15-20 minutes. Cool 10 minutes. Then serve warm with Pizza sauce for dipping
Zuc bites 1 c zucchini, grated 1 egg 1/4 yellow onion, diced 1/4 c cheese (cheddar or Parmesan work the best) 1/4 cup bread crumbs Salt and Pepper. 400F. Spray a mini-muffin tin. Grate zucchini and place in a dish towel to squeeze out water; if you skip this part, the middle of the zucchini tots will be soggy while outside gets crispy.Combine, the egg, onion, cheese, bread crumbs, zucchini, salt and pepper. Using a spoon fill the muffin cups to the top. Bake for 15-18 min.
