Creamy Spinach Salmon - stir to combine spinach (fresh or frozen), 2 c. cream or half & half, 3 tbsp soy sauce, 2 tsp Dijon mustard, 1/2 tsp ground nutmeg and salt & pepper to taste to a 12" nonstick skillet. Place salmon atop mixture, skin side down. Cook for 20 min at slow simmer. Periodically spoon sauce over fish while cooking. Mix tbsp of corn starch & tbsp water. Stir into sauce to thicken and cook another 5-10 min depending on thickness of salmon. Really tasty!

Homestyle Chicken Noodle Soup (in less than 30 minutes!) I made this using a left over roasted chicken from safeway (after I ate all the skin, of course) and it was so yummy!
